Yeast, Dairy, Wheat and Sugar Free Zucchini Bread

Being on the candida diet you have to try to modify your old yummy recipes you used to make.  This recipe has NO  yeast, wheat, sugar, or dairy...Since our whole family in on the Yeast Free diet I really try to hide vegetables into my dishes for my two yr old.  She loves carbs and if I can get some good stuff in her I am a happy momma.  I have been going weekly to the Rescue Mission Farmers market to get my produce for the week and I have a ton of zucchini and squash that I needed to use.  The bread is baking now and it smells so yummy!  I spread Clarified butter and sprinkled xylitol on top of my piece..it was so good!



Ingredients

This makes TWO loaves
  • 2   8x4 in pans greased
  • 3   cups Brown Rice Flour
  • 1 tsp Sea Salt
  • 1 tsp Baking soda
  • 1 tsp Baking Powder
  • 3 tsp ground cinnamon
  • 3 organic eggs
  • 1 cup coconut oil (melted)
  • 7 Tbsp Vegetable Glycerin
  • 3 tsp vanilla extract (no alcohol)  Trader Joe's brand
  • 2 heaping cups finely grated organic zucchini (1 very large)
  • 1 cup finely grated organic carrot (two carrots)
  • 1/2 cup finely grated organic yellow squash (1 very small
  • 1/4 cup ground flaxseed meal

Directions
Grease pans and preheat oven to 325 degrees.  Sift flour, salt, baking powder, baking soda, and cinnamon together in a bowl.  Beat eggs, oil, vanilla, and vegetable glycerin in a seperate bowl (use a whisk or electric beater)  Add sifted ingredients and beat well...stir in zucchini, carrots, squash, and flaxseed.  Pour batter into pans and bake for 40-60 min.  Let cool completely.  It can be frozen if needed.
