Yeast Free Eggs Florentine

Our morning routine consists of my daughter getting up at 5:45am...proceeding to the kitchen for a bowl of brown rice and unsweetened vanilla almond milk with a drop of Stevia.  Then about 7:00am she says she is hungry..my hubby gets up and now its time to make our usual egg dish.  I created a new egg dish this morning to keep us healthy and looking forward to our eggs in the morning. 




Eggs Florentine Ingredients

1/3 cup chopped yellow onion
1 tsp coconut oil
1/4 of a red bell pepper chopped
1/4 of a green bell pepper chopped
Two large handfuls of spinach (I buy mine from Costco "Organic" and I keep it in the bag and in the freezer this way when I need some spinach I always have fresh yet frozen on hand)
Oregano to taste
Salt to taste
Pepper to taste
Avocado Sliced
1 Large Free Range Organic Egg

Saute onion and bell peppers in Coconut Oil.  Then add Spinach, salt, pepper and oregano and heat thoroughly but don't cook out all the nutrition.  Once heated place on your place and proceed to fry your egg in the remaining coconut oil.  Once your egg is cooked to your liking place on top of spinach and add your slices of avocado.  Yummo!  Looking forward to tomorrow :)

Yeast Free Crockpot Chicken Taco Chili

Who doesn't love the crockpot?  A few days ago I was on the hunt for canned tomatoes or jarred sauce that did not have citric acid, sugar or other additives because they are just so convienient.  I went to World Market to see if they had 100% Chicory drink and they did not but while browsing the isles I came across Pomi brand tomatoes.  The ingredients in this 30oz diced tomatoes reads "tomatoes." I was so excited! Tonights dinner is a Yeast Free Crockpot Chicken Taco Chili.  Feel free to add or omit items if you are sensative. 




Combine Ingredients and mix together in the crockpot then place the chicken on top.  Low 8 hrs High 4 hrs
Yeast Free Crockpot Chicken Taco Chili Ingredients:
1 can black beans
1 can kidney beans (I use another can of black or northern beans...cannot tolerate kidney beans)
1 onion chopped
1-10oz frozen roasted corn (Trader Joes...omit if sensative)
1-14oz frozen fire roasted bell peppers & onion (Trader Joes)
60 ounces diced tomatoes (brand I found at World Market is Pomi chopped tomatoes..ingredient "tomatoes" and thats it
1 seedless jalapeno pepper chopped
4 Tbsp Taco Seasoning (see below)
Chopped fresh cilantro to top the chili
1 dalup Goat yogurt with one drop of Stevia (omit if sensative)
sliced avocado

Yeast Free Taco Seasoning (I triple this recipe and keep it on hand in the pantry)
1 TBSP Chili Powder
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1 1/2 tsp Cumin
1/2 tsp Paprika
1 tsp Salt
1/2 Black Pepper
Pinch Red Pepper Flakes

** It was delicious..my husband and I had two bowls and believe it or not the Goat yogurt was the perfect addition.  Let me know what you think!

Yeast Free Garlic Hummus

Finally did it!! I am so proud of myself I finally made homemade Garlic Hummus.  Two days ago I realized within my research that on the Yeast Free Diet that Citric Acid is not allowed.  I then went to look at my hummus in the fridge and it had Citric Acid..  I had to go to three stores to find the ingredients necessary but all in all it was totally worth it.  I used a vitamix to blend all ingredients once in the container.  Enjoy!

Yeast Free Garlic Hummus Recipe
 
1/2 cup garbanzo beans juice
4 tablespoons fresh squeezed lemon juice
4 tablespoons tahini
4 clove garlic ( I added whole)  if you want less garlic flavor add less
1/2 teaspoon sea salt...I added a little more after I tasted it
Yeast Free Garlic Hummus Directions
 
Drain chickpeas reserving 1/2 cup of the liquid
Place all ingredients in the blender and mix until smooth and creamy

2 can garbanzo beans (15.5 ounce can) (Ingredients in the can...garbanzo beans, water, sea salt)

Yeast Free Easy Chicken Vegetable Noodle Soup

For the past few weeks here in Cali the weather has been nothing but a beautiful 76 degrees.  Well it is finally a little taste of winter today..gloomy, cold, and raining.  Last night my 2 yr old little girl woke up at least 5 times and you know what that means....yes she caught a cold!  We leave for Hawaii in 6 days so I am on a mission to get her better.  So today has consisted of many movies and homemade chicken  vegetable noodle soup.  It was really really good. 

Recipe

32 oz Organic Chicken Stock (Costco Bulk)
32 oz Water
1 cup cut or shredded Chicken or Turkey (I had left over turkey I needed to use)
3 Large Carrots (washed, peeled, and sliced)
3 Stalks Celery (washed, peeled, and sliced)
1/2 Yellow Onion diced
Salt (to taste)
Pepper (to taste)
Oregano (few dashes)
1 small Zucchini (washed and cut) (add with pasta)
1 small Yellow Squash (washed and cut) (add with pasta)
 2 cups Brown Rice Fusilli (Trader Joes)

Bring all of the items to a boil and simmer until carrots are a little tender.  Then add Zucchini, Squash, and 2 cups of Brown Rice Fusilli Pasta.  Boil until pasta is al dente.  Serve and enjoy!

Costco Yeast Free Dinner

Turkey Breast, Roasted Brussel sprouts and quinoa with toasted slivered almonds and cilantro is whats for dinner.  If you can believe this I got everything at Costco!! I love this store.  I have a electric roaster that sits on the counter and it is so easy to use but rarely use it.  Since our electricity bill has been kinda high I thought I would try this and save a few $$.  Obviously this whole meal is Yeast free and super yummy...we actually had our neighbors drop by along with their 2 yr old daughter and everyone had seconds.    My 2yr old daughter loved the turkey and quinoa.  This was our first night having company over on a weekend along with a meal and did not have a glass of wine.  This was kinda hard but we made homemade ginger tea with Stevia and it was perfect for after dinner something.

Turkey seasoning was Olive Oil, Sea Salt, Black Pepper, and Kirklands No Salt Seasoning.
Roasted Brussel Sprouts...Washed, cut in half, drizzled with Grapeseed Oil, Sea Salt, Black Pepper, and Garlic Powder (Delicious and I don't like brussel sprouts but the grapeseed oil made them taste sweet)
Quinoa...Chopped Cilantro, toasted Slivered Almonds in a pan, and a little grapeseed oil.

I miss our Friday night Pizza and Wine night!

Before our test results our friday nights for my family consisted of going out to dinner, making or ordering pizza along with a glass of wine but now that has all changed.. :(  I know for the better but that still doesn't mean it is easy.  I had leftover bbq'd carne asada from last night that I had to use for dinner.  Well I actually used it for breakfast as well as for dinner.  Leftovers and the candida diet do not mix..leftovers grow mold in the fridge.  However on the realistic side I am not going to throw out plenty of good carne asada so I knew I needed to use it quickly.  So I googled leftover carne asada recipes and this is what I found Simple Steak Picado.  I had everything on hand except in reading my labels the Hunts Stewed Tomatoes I buy in bulk from Costco contain sugar.  I accidentally picked up the italian season stewed tomatoes but I believe the regular Hunts stewed tomatoes does not contain it.  It was really yummy and we ate it all.  My two year old daughter even said good dinner mommy!  Success!
